The ingredients needed to make Mexican Rice:

  1. {Get 200 gms of Basmati Rice.
  2. {Prepare 1 Cup of Chopped Capcicum.
  3. {Prepare 1 Cup of Chopped Carrot.
  4. {Take 1 Cup of Kidney Beans /Rajma.
  5. {Take 1 Cup of Green Peas.
  6. {Take 1 Cup of Chopped Onion.
  7. {Get 1 Spoon of Chopped Garlic.
  8. {Get as requried of Oil for Cooking.
  9. {Prepare 1 Spoon of Butter.
  10. {Prepare 1/2 tsp of Black Pepper Powder.
  11. {Get 1 Spoon of Chilli Flakes.
  12. {Take 1 Spoon of Origano.
  13. {Prepare as per taste of Salt.
  14. {Get 5-6 of Tomatoes for puree.
  15. {Take 1 Spoon of Red Chilli Powder.
  16. {Get 1 Cup of Sweet Corn.
  17. {Get as required of Green Fresh Coriander for flavouring.

Instructions to make Mexican Rice:

  1. Firstly, Take Kidney Beans or Rajma Soaked it for 5-6 hours then Boiled it in a Cooker till 5-6 Whistles, Retain water and keep aside..
  2. Now take Fresh Tomatoes 4-5 add 1 Spoon Red Chilli Powder blend it in a blender and make a tomato puree and keep aside..
  3. Now take 200 gm Basmati Rice Clean it, Wash it and keep aside then take all the Carrot, Capcicum, Onion Chopped it and lastly peas and keep aside..
  4. Now heat Kadhai or Pan for 2 min add oil 2 Spoon full and Butter 1 Spoon heat for 2 min then add Washed Rice into it fry for 5 to 7 min on medium flame till become light brown in colour..
  5. Afterwards add Chopped Onion and Cook for 5 min then add Chopped Garlic 1 Spoon and Cook for 5 to 7 min till it's become translucent..
  6. Afterwards add all the Veggies Green Peas, Chopped Carrot, Chopped Capcicum, Sweet Corn mix well cook for 2 min then add Tomato Puree into it and Water as required..
  7. Now add 1 Spoon Chilli flakes,1 Spoon Origano, Salt to taste mix well then add kidney Beans into it mix well again..
  8. Lastly add Green fresh Coriander for flavouring on the top of the mixture,Cover the lid and cook the Mexican Rice for 15 to 20 min on medium flame till the Rice Cook..
