Instructions to make Veggie Paneer Delight:

  1. To start with the recipe, first take tomatoes, ginger, garlic, cardomon, red chilles and grind them into a smooth paste. Add water if required..
  2. On the other hand, soak tamarind in water and set it aside..
  3. Now take a pan add some oil to it. When the oil is hot add cumin seeds, bay leaf, cloves, cinnamon and green chillies, sauté for few seconds. Then thrown in the ground paste and let it cook for some time, say 3 to 4 mins, or until oil oozes out..
  4. Then side by side take another pan pour in some oil, when the oil is hot add sliced onions, saute till they are translucent, then throw in capsicum, tomatoes (deseeded and cut in large pieces), carrots and baby corn. When the veggies are slightly cooked throw in paneer (cut into large pieces), salt to taste and crushed pepper. Cook for around 1 min on a slow flame..
  5. Meanwhile our tomato paste is cooked then pour in the tamarind pulp to it (squeeze tamarind you will get the pulp) once simmered then drop in the cooked veggies..
