Steps to make Mixed Vegetables:
- First wash and rinse well all the vegetables. And finely chop it..
- Chop all vegetables small to medium sized or as per your choice.
- Take a kadhai, add oil,heat well,add mustard seeds, as it splutters add asafoetida..
- Then add finely chopped green chilies and grated ginger.Here I have added one whole green chilli too(can be skipped). Add French beans, carrots and potatoes. Stir and roast it for 2 to 3 minutes on medium to high heat..
- Then add finely chopped cabbage. Mix it well..
- Then add peas and capsicum. Mix it all nicely..
- Add salt,red turmeric powder, red chilli powder,coriander powder.Mix it well..
- Cover kadhai with a lid and let it cook on low heat till 80 percent is cooked..
- Then add finely chopped tomatoes. Mix well..
- Cover the kadhai with a lid.Let it cook on low heat till the sabzi is cooked well.In between check and stir..
- Once the sabzi is cook well switch off the heat.Garnish with fresh coriander leaves..
- Can be eaten will dal rice or chapati, puri or paratha..
